YUMMY Carrot Cake

This is the best carrot cake I've EVER had! YUMMY!!!

2 c. flour
2 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
1 1/2 c. oil
3 c. grated raw carrots
4 large eggs
1 1/2 c. chopped walnuts
Raisins (optional)

Mix dry ingredients together. Add oil and mix. Then add carrots and optional raisins; mix. Then add eggs one at a time, mixing in between each one. Bake in floured bundt pan at 350 degrees for 30-40 minutes. Top with cream cheese frosting and chopped nuts.

CREAM CHEESE FROSTING:
3 oz. cream cheese
1/4 c. butter
2 c. powdered sugar
1 tsp. vanilla
